The climate of the Clare Valley allows for long slow ripening conditions with dry warm to hot conditions through to April. Fruit sourced from a single dry grown vineyard in our north eastern section of the vineyard with north/south running rows with an elevation of 455m. The soil is a sandy loam and clay soil structure. This small 2.5acre block, produces a softer style shiraz with raspberry notes with a hint of liquorice and chocolate. The light tannin profile help flavours linger on the palate. - [Sussex Squire Bella’s Fiano 2026](https://www.sussexsquire.com.au/product/sussex-squire-bellas-fiano-2026/) - Bella’s Fiano named after our newest addition to the family, Bella the border collie. A new project in the area of emerging Italian varieties that has been on the drawing board for a couple of years. In 2024 we were lucky enough to secure 2 tons of fruit from a well-established vineyard on Springfarm Road and the project came to life, then in 2025 a frost event stopped us producing the next vintage which was disappointing as the wine was very popular. 2026 had another frost event that again impacted our potential to produce a wine, so it forced us to seek parcels of fruit outside of the Clare Valley. McLaren Vale was the obvious choice, and we were lucky enough to secure a couple of tons from a grower in McLaren Vale which we hope to work with again going forward. Keeping to the 2024 formula to produce a similar profile Fiano we maintained similar winemaking techniques to produce a more textural style with 25% of the juice fermented on skins for 4months before we blended with the free run juice in tank. The wine shows lovely acidity with a hint of honey and nuts with fresh pear, citrus. Lovely textural mouthfeel and acidity makes this a lovely food wine and will develop further in the bottle with a couple of years cellaring. This wine is best suited to slow cooked meats, duck with rich flavours and it will go well with spicy food. 2023 was a cooler vintage that produced an elegant silky expression from a 40 year old dry grown vineyard producing lovely perfumed aromatics with dark fruits of blackberry blueberry, with a floral notes of violets and rose petal overtone balancing the soft tannins by aging in 25% new French oak for 15 months. It was fermented on skins for 9 days in open fermenters. Skins pumped over and then basket pressed lightly to control tannin extraction. - [Sussex Squire Thomas Block Shiraz 2023](https://www.sussexsquire.com.au/product/sussex-squire-thomas-block-shiraz-2023/) - The Sussex Squire Thomas Block Clare Valley Shiraz is dry grown and under vine is maintained with organic principles to ensure an active microbiological environment for the vines to grow and develop their own unique characters in the fruit. The fruit for the Thomas Block Shiraz comes from a 2.5acres section of our dry grown vineyard that sits on a rocky ridge line with lean soils on a north westerly aspect between 470-485m above sea level. The soil struggles to hold moisture and the vines produce small bunches and small berries in the tough growing conditions which helps produce the unique intense red and blue fruit flavour profile with grippy tannins. Hand picked and then de-stemmed and pumped into a 5 tonne open fermenter which is hand plunged and pumped over daily to break the cap and assist with skin contact. Left on skins for 10 days before filling the basket press with skins to drain off the juice (without pressing) and pumped into tank for secondary malolactic fermentation. It was then racked off and placed into 25% new French oak barrels for 15months. The 2023 vintage was a cooler vintage overall with the vines enjoying a cooler longer ripening conditions that resulted in the fruit producing a rich and elegant wine of red berries and blueberries with silky tannins evolving and softened with aging for 15 months in 25% new and old French oak. FOOD MATCH: Great with BBQ steak or roast beef on the spit. CELLARING: Drink Now or if you can wait a little bit longer Cellar 8yrs + 2023 Sussex Squire Thomas Block Shiraz pH - 3.51 TA - 7.15 Alt - 13.8% Released October 2024 - Only 165 dozen produced

A beautiful mild vintage in 2021, saw the vineyard ripen evenly with the fruit showing finesse and elegance though lifted red and black fruit and savoury flavours. The Malbec was fermented on skins for 10 days in open fermenters and then the skins drained through the basket press to control tannin. The vineyard is set on the West facing slope with the Sangiovese vines up on a high ridge with the rows running North South at an elevation from 470m-440m and the vines planted between 1992-1994 From the 2022 Vintage, the fruit was picked in late March 2022 after a long mild dry growing season. The long ripening period was excellent with even heat and dry conditions producing a savory complexity in the fruit combining with the excellent acidity. The Darting Hare Sangiovese 2022 is a wine which is bright and lively showcasing strawberry and dark cherry notes from a mild dry vintage, that make Sangiovese stand out as a great food wine. With the minimal use of new oak, the fruit stands out on the front palate making it a great pizza and pasta wine that can match it with a savory and spicing topping or sauce. Darting Hare Sangiovese is light to medium bodied wine showing classic Sangiovese characteristics of savoury cherry & strawberry. Aged in 20% new French oak for 12 months. Hand picked and then de-stemmed and pumped into 3 tonne open fermenters. Hand plunged twice a day to break the cap and assisted with skin contact. Left on skins for 10 days before lightly basket pressed and pumped into tank for secondary malolactic fermentation. Then placed into 50% new and old French Oak barrels for 20 months. The wine shows lovely elegant dark red blue fruit with depth and complexity entwined with the new French oak producing chocolate mocha notes on the finish with a fine tannin structure. A classic Australian blend using two of my best blocks of Shiraz and Cabernet to produce a wine that combines the savoury red fruit flavours of the Shiraz with the black cherries and blackberries of the Cabernet to fill the mouth with a combination of flavours and tannin that balance beautifully together and linger on the palate. Selected two dry grown vineyard a 55/45 blend with the melding together of red and black fruit to create a complexity of flavours and length with soft lingering tannins. FOOD MATCH: BBQ Angus Beef Steak . CELLARING: Drink Now or Cellar 8 -10yrs
