Description
This is the 3rd shiraz from our beautiful 2022 vintage and comes from the Estate Block made up of the 35 rows through the centre of the main block just below the Thomas Block which sits up on the ridge line. These rows are on a deeper rocky loam soil with a higher moisture level and more clay through the lower soil profile as you go further down the slope. This whole section was reworked in 2020 and is now back in full production.
Shiraz is dry grown and maintained with organic principles. Hand picked and then de-stemmed and pumped into 3 tonne open fermenters. Hand plunged twice a day to break the cap and assisted with skin contact. Left on skins for 10 days before lightly basket pressed and pumped into tank for secondary malolactic fermentation. Then placed into 50% new and old French Oak barrels for 20 months.
The wine shows lovely elegant dark red blue fruit with depth and complexity entwined with the new French oak producing chocolate mocha notes on the finish with a fine tannin structure.
Food Match: Great with Braised Beef Short Ribs.
