The Mataro from a dry grown vineyard situated in the cooler Polish Hill River region on a high western slop above 450m. It was fermented in in a 5 ton open fermenter to get maximum colour and flavour extraction. Pumped over daily and basket pressed lightly to control tannin extraction. Lovely perfumed aromatics with dark fruits of blackberry blueberry, entwined with violets rose petals notes balancing the soft tannins with aging in 2nd and 3rd use French oak for 14 months to add a layer of subtle complexity of oak with the lifted fruit characters.
