Description
The Sangiovese grapes comes from an old Penfolds vineyard block at the back of Sevenhill that borders my Grandfather’s farm. The vineyard is set on the West facing slope with the Sangiovese vines up on a high ridge with the rows running North South at an elevation of 520m and the vines planted between 1992-1994
From the 2020 Vintage, we picked the fruit for our Clare Valley Sangiovese in early March 2020 after a very hot December 2019 start to the growing season. The ripening period was excellent with even heat and dry conditions that produced more depth and complexity in the fruit that combines with the acidity to showcase the elegant fruit.
The Sly Fox Sangiovese 2020 style is to produce a wine which is more slinky and sly with more sophistication that will pair well with more complex and richer food. To create this style the parcel of wine is treated with a higher level of new and old French oak for 18 months to allow the rich fruit profile to develop and to produce more complex and refined mouth feel and depth.
The strawberry and cherry fruit notes with mid palate savoriness is held by the layered toasty new oak from aging in 80% new French oak for 18 months. It develops more mid-palate depth and broader mouthfeel which will evolve further over time with extended cellaring.
